11.00am: Helen and Jenny O’Brien - Nì Bhrian Restaurant
We’re kicking off the Taste Waterford Kitchen with the ever-passionate Jenny and Helen O’Brien, owners of Nì Bhrian Restaurant.
Based in Kilmacthomas - the sisters create delicious home-cooked food that sings local Waterford produce, and always brings a smile to your face!
With an emphasis on a menu as food allergen friendly as possible, they don’t shy away from making dishes that consider people’s food intolerances - and deliver food that is welcoming to all.
They’ll be preparing on stage a gluten-free Tunisian Orange Cake, along with blaas from Walsh’s Bakehouse with a selection of local fillings.

12.00pm: Cáitlín Uí Aodha - IASC Seafood Bistro and Liam McDonnell - Legacy Irish Cider
What happens when two award-winning producers come together for a demo? An exciting collaboration that excites the senses!
Owner of IASC Seafood Bistro, Cáitlín Uí Aodha and founder of Legacy Irish Cider - Liam McDonnell, know how to create incredible food and drink. Today’s demo is all about how these pair together.
They’ll create a dish that’ll make you think about how to use cider as a drink on its own, and as the perfect complement to fish.
Along with producer stories and a chance to try the dish, it’ll take you on a journey from fields to the sea - what an experience!
1.00pm: Kamila Bystrzonowska and Michael Buchta - Momo Restaurant
With a reputation for delivering outstanding food showcasing the finest of Waterford ingredients - we’re delighted to welcome on stage owner of Momo Restaurant Kamila Bystrzonowska and head chef Michael Buchta.
Their dish lives up to their strong ethos - pasta from Seagull Bakery, fish sourced at Billy Burke and Jim O’Doherty Fish & Seafood, local vegetables, and the final sprinkling of seaweed from The Sea Gardener - Marie Power - this dish will highlight both the varied and quality of produce in Co. Waterford.
Be prepared for exciting food stories, understand what makes Waterford produce so good, and learn how the team at Momo achieved multiple awards over the years.
And with tastings at the ready - you’ll have a true understanding of what makes this restaurant so special.
2.00pm: Luis Martin - Mara Restaurant
Three words: creativity, innovation, outstanding flavours.
OK, that’s four - but it’s hard to put into a few words as to the ethos of Luis’s food - head chef and owner of Mara Restaurant.
His dishes celebrate the use of seasonal and local produce, with a Spanish twist, and presentation that would be worthy of an art gallery.
With a stint at a three Michelin-starred restaurant in Spain, along with roles in leading Irish establishments, it’s easy to see why Luis is winning praise, and picking up awards too.
He’ll create an exciting potato and mussel soup with kohlrabi, and talk about his love for food and Waterford.
And when you try this dish, it’ll endorse just why Mara is an exciting culinary destination in Waterford.
3.00pm: Sean Davidson - Faithlegg Hotel
Our last demo of the day will undoubtedly end in amazing tastes, ingredients that shine, and food stories that fascinate - bring in executive sous chef at Faithlegg Hotel – Sean Davidson.
His passion for seasonal and local produce is inspiring, offering fine dining with beautiful plates of fresh produce and unique flavour. His grandmother was the head chef of the German Embassy in South Africa, and where Sean fostered his love for cooking by her side.
He’ll take you on a food journey of preparing a mackerel ceviche dish, local beet greens crisps, and an almond and Flahavan’s oats sauce – wow!
Along with tastings, this will be a truly exciting end to this year’s Taste Waterford Kitchen at the Waterford Harvest Festival.
